Almond cake
INGREDIENTS:
250 gr of almond flour.
225 gr of white sugar.
4 eggs.
zest of half a lemon.
Powdered sugar.
Butter.
PREPARATION METHOD
Before starting, the oven must be preheated to 180 degrees. Put the four eggs in a bowl together with sugar and the lemon zest and beat lightly to prevent air to be integrated in the mixture. Then add almond flour or ground almonds. Optionally, add a pinch of cinnamon.
Grease the bottom of the cake pan with butter, and then pour the unleavened dough. Then, introduce it in the preheated oven for 30-40 minutes. After that, it should have a uniform golden colour. Remove it and, after a few minutes, demould it. To finish, place the cut-out of the cross of Santiago and cover the top with powdered sugar
