Pasta with artichoke and almond sauce

INGREDIENTS:

400 gr of macaroni (or spiral pasta).
8 small artichokes.
100 gr of sliced almonds.
4 pieces of celery.
Oil and salt.


PREPARATION METHOD

First, remove the outer leaves of the artichokes, which are the hardest. Then, clean the core of the same, cut it into pieces and boil it in a pot. At the same time, prepare water for boiling in a second container and cover it. Next, cut the pieces of celery into very thin pieces, and boil them.

After ten minutes, remove the artichokes and place them on a plate.

Heat a pan with a good amount of oil and add the pieces of celery with the artichokes previously boiled.

Afterwards, move the artichokes to a large mixer to beat them. If the sauce becomes too dense, add a couple of tablespoons of boiling water. Add some pieces of sliced almods and beat them with the artichokes.

Simultaneously, fry the outer leaves of the artichoke in a frying pan with oil. In another pan, add sliced almonds.

Once the pasta is properly cooked, drain it and move it to a container to mix it with the cream of artichoke, celery and almond.

Finally, sprinkle sliced almonds on the pasta and decorate it with fried artichokes.
